SUMMER ICE CREAM CAKE





















  INGREDIENTS                                                                                           
                                                                  
CRUST                                                                                                                                                           
  •  200g  pitted dates
  •  1 cup rolled oats                                                                                      
 FIRST LAYER
  •  2 frozen bananas (peel the bananas and cut them into slices,placing the slices into the freezer for at least two hours(i normally freeze mine overnight)).
  •  2-3 dates
  •  1/2 cups shredded coconut
 SECOND LAYER
  •  2 frozen bananas
  •  1 cup frozen cherries
  •  2-3 dates


HOW TO...

  1.  For the crust, process dates and oats in a food processor for about 1 minute. It should form a "dough" like consistency.  
  2. For the first layer, process bananas, dates and shredded coconut, or blend them using some liquid for easier blend, i use water or almond/coconut milk. Pour the mixture on the crust and place the cake in the freezer.
  3. repeat step 2., pour it on the first layer and place the cake in the freezer for at least 5 hours or overnight.

* before eating leave the cake outside the freezer for a couple of minutes.





You can play with the layers and create different looks:)
