Christmas grancereale orange cookies/ Božićni Grancereale keksi sa narančom





INGREDIENTS:

1 1/2 cups almond meal
2 tbsp buckwheat flour(or other flour of your choice)
2 tbsp coconut flour
2 tbsp sesame seeds
1/2 tsp salt
1/2 tsp backing powder
1/2 tsp baking soda
1/2 tsp cinnamon
3 tbsp coconut oil
3 tbsp honey
orange (juice)
dark chocolate or chocolate chips

DIRECTIONS:

  1.  Preheat the oven to 350F 
  2. Mix the almond meal, buckwheat flour, coconut flour,sesame seeds,salt,backing powder,baking soda and cinnamon in a bowl.
  3. In separate bowl mix coconut oil (melted), orange juice and honey.
  4. Combine the mixtures together and stir well. It should form a thick dough that is hard to stir.
  5. Form dough into tablespoon size balls , cover them with chocolate chips and bake for 10-15 min.
  6. Let cool at least 5 minutes and serve.
  7. Enjoy!

SASTOJCI:

1 1/2 šalice bademovog brašna
2 kašike brašna od heljde (ili nekog drugog brašna po želji)
2 kašike kokosovog beašna
2 kašike sezama
1/2 kašikice soli
1/2 kašikice sode bikarbone
1/2 kašikice praška za pecivo
1/2 kašikice cimeta
3 kašike otopljenog kokosovog ulja
3 kašike meda
sok od naranče
tamna čokolada

UPUTE:

  1. Zagrijte pečnicu na 180 C.
  2. U jednoj posudi pomiješati suhe sastojke- bademovo brašno, kokosovo brašno, heljdino brašno, sol, sodu,prašak za pecivo,sezam i cimet.
  3. U posebnoj posudi pomiješati med,ulje i sok od naranče. 
  4. Spojiti dvije smjese .
  5. Vaditi tijesto kašikom i formirati kekse, posuti čokoladom. Pustiti da se peku 10-15min.
  6. Ostaviti hladiti barem 5 min prije serviranja.

BANANA BREAD (gluten free) / KRUH OD BANANE (bez glutena)


INGREDIENTS:

  • 3 ripe bananas
  • 1 tbsp flax seeds ( mix flax seeds with 2.5 tbsp of water and set for 5 min)
  • 3 tbsp melted coconut oil
  • 1/2 cup of honey
  • 3.5 tsp baking powder
  • 3/4 tsp sea salt
  • 1/2 tsp cinnamon
  • 3/4 cup of water
  • 1 1/4 cups almond meal
  • 1 1/4 cups buckwheat flour (or rice flour)
  • 1 1/4 cups oats

DIRECTIONS:

Preheat oven to 180 C (350 F)
Mash the bananas and add flax seeds, coconut oil,honey,baking powder,salt and cinnamon, whisk to combine well. Add water, almond meal,flour and oats and  combine the mixture. 
Bake for 1 hour. Let it cool before cutting.

SASTOJCI:

  • 3 zrele banane
  • 1 žlica lanenih sjemenki (pomješati lanene sjemenke sa 2.5 žlice vode i ostaviti da odstoji 5 minuta)
  • 3 žlice kokosovog ulja (u tekućem stanju)
  • 1/2 šalice meda
  • 3.5 žličice praška za pecivo
  • 3/4 žličice soli
  • 1/2 žličice cimeta
  • 3/4 šalice vode
  • 1 1/4 šalice mljevenih badema
  • 1 1/4 šalice brašna od heljde (ili rižinog brašna)
  • 1 1/4 šalice zobenih pahuljica

UPUTE:

Zgniječiti banane u večoj zdijeli , dodati lanene sjemeke, kokosovo ulje, med, prašak za pecivo, sol i cimet i dobro pomiješati. Dodati vodu, mljevene bademe, brašno, zobene, pomiješati.
Peći 1 sat na 180 C. Ostaviti da se ohladi potpuno prije rezanja.

SNICKERS ENERGY BITES




INGREDIENTS (for 20 small squares)
  • 100g dates
  • 4 dried figs
  • 1/2 cup almond flour( or other nut flour)
  • pinch of salt
  • vanilla 
  • falx seeds
  • sunflower seeds
  • 2 tbsp peanut butter
  • coconut oil
  • cacao powder
  • 20g dark chocolate
DIRECTIONS
Process dates,figs and almond flour in food processor adding just a little sip of water, pinch of salt and vanilla. Then mix in sunflower seeds and flax seeds by hand. 

Take 1/2 of the date mixture and press firmly into the bottom of an 8x8 glass dish.
Spread peanut butter on the top evenly. Top that with the rest of date mixture.
-For chocolate glaze, melt dark chocolate,powder and coconut oil in microwave oven.

Before cutting , freeze  for at least 5 hours, i recommend to leave it over night...if you can:))

HUMMUS!


For 5 servings
INGREDIENTS
  • 240g chickpeas
  • 1 lemon(juice)
  • 1 tbsp tahini
  • pinch of salt
  • a clove of garlic
  • 2 tbsp of olive oil
  • cayenne pepper (optional)
  • 1/4 cups of water or liquid from chickpeas
DIRECTIONS
Combine ingredients in blender or food processor. Add 1/4 cup of liquid from chickpeas or water. Blend on low until thoroughly mixed and smooth.

HORMONE BALANCING TRUFFLES

INGREDIENTS
  • 100g dates
  • 1/2 almond flour
  • raw cacao
  • maca powder*
  • pinch of salt
  • flax seeds
  • shredded coconut
DIRECTIONS
Process all ingredients in the food processor until they form sticky dough, then just form balls with your hands and roll them in coconut......it's simple and quick. Enjoy!



 Maca is  a root that  grows in the  mountains of Peru. The root is packed with nutritionally rich substances which make it an incredible instrument for contributing good balance to your daily diet.
Around the nutritionary side, this root is full of minerals and vitamins which are required to the healthiness of your body. BANANA ICE MOCCACINO


 Skipping breakfast or coffee is never an option for me,even when i'm in the rush (i do plan to stop drinking coffee in the future,but for now i will enjoy my coffee:)) So i combined the two and made myself this delicious banana ice moccacino to save time.

INGREDIENTS
COFFEE

  • 1 frozen banana
  • ice cubes
  • instant coffee
  • 1 scoop of protein powder (whey,hemp,soy)
  • cinnamon
  • few almonds
CHOCOLATE SAUCE
  • raw cacao
  • coconut milk
  • few dates
DIRECTIONS

Blend coffee, banana,ice cubes,protein,cinnamon,almonds and milk until smooth.
Separately blend cacao ,dates and little milk or water to make chocolate sauce. Or just blend all ingredients together if you really want to save time and enjoy the rest of your day!

SUMMER ICE CREAM CAKE





















  INGREDIENTS                                                                                           
                                                                  
CRUST                                                                                                                                                           
  •  200g  pitted dates
  •  1 cup rolled oats                                                                                      
 FIRST LAYER
  •  2 frozen bananas (peel the bananas and cut them into slices,placing the slices into the freezer for at least two hours(i normally freeze mine overnight)).
  •  2-3 dates
  •  1/2 cups shredded coconut
 SECOND LAYER
  •  2 frozen bananas
  •  1 cup frozen cherries
  •  2-3 dates


HOW TO...

  1.  For the crust, process dates and oats in a food processor for about 1 minute. It should form a "dough" like consistency.  
  2. For the first layer, process bananas, dates and shredded coconut, or blend them using some liquid for easier blend, i use water or almond/coconut milk. Pour the mixture on the crust and place the cake in the freezer.
  3. repeat step 2., pour it on the first layer and place the cake in the freezer for at least 5 hours or overnight.

* before eating leave the cake outside the freezer for a couple of minutes.





You can play with the layers and create different looks:)
